Chocolate Volcano Dream Cake for Thermomix
Ingredients
400 g dark chocolate
300 g milk chocolate
250 g unsalted butter
500 ml thick cream
250 ml full cream milk
300 g brown sugar
200 g white sugar
6 large eggs
2 teaspoons vanilla extract
350 g plain flour
80 g cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
250 ml hot coffee
300 g chocolate chips
200 g hazelnuts chopped
150 g caramel sauce
200 g Nutella
300 g mascarpone cheese
100 g icing sugar
200 g strawberries sliced
100 g raspberries
100 g blueberries
Extra melted chocolate for decoration
Method
Preheat oven to 170°C. Grease and line three large cake tins.
Place dark chocolate and milk chocolate into the Thermomix bowl. Mix 15 sec speed 8.
Add butter and cream. Heat 5 min 50°C speed 2 until smooth and glossy.
Transfer half of the chocolate mixture into a bowl for later ganache filling.
Without washing the bowl add sugars, eggs and vanilla. Mix 40 sec speed 5.
Add flour, cocoa powder, baking powder, baking soda and salt. Mix 30 sec speed 6.
Pour in hot coffee slowly while mixing 20 sec speed 4.
Fold in chocolate chips and hazelnuts using Reverse 15 sec speed 3.
Divide batter evenly into prepared tins.
Bake for 35 to 40 minutes or until a skewer comes out slightly moist.
Allow cakes to cool completely.
For the filling place mascarpone, icing sugar and Nutella into the Thermomix bowl. Mix 30 sec speed 5 until creamy.
Place first cake layer on a serving plate.
Spread a thick layer of Nutella mascarpone cream.
Pour some reserved chocolate ganache over the cream.
Add strawberries and raspberries.
Place second cake layer on top and repeat the process.
Add final cake layer.
Pour remaining ganache over the entire cake allowing it to drip down the sides like lava.
Decorate with blueberries, extra strawberries, chopped hazelnuts and swirls of caramel sauce.
Drizzle melted chocolate generously across the top.
Chill for at least 2 hours before serving.
For an even richer version serve warm slices with vanilla ice cream or whipped cream.

250 g cream cheese

100 g crushed chocolate biscuits

Method
Preheat oven to 165°C and prepare three deep cake tins.
Place dark chocolate, milk chocolate and butter into the Thermomix bowl. Heat 6 min 50°C speed 2 until melted.
Add sugars, eggs and vanilla. Mix 45 sec speed 5.
Add flour, cocoa powder, baking powder, baking soda and salt. Mix 40 sec speed 6.
Pour in buttermilk and hot coffee slowly while mixing 20 sec speed 4.
Add chocolate chips and almonds. Reverse mix 15 sec speed 3.
Pour batter into cake tins and bake for 40 minutes.
Cool completely before decorating.
For frosting place cream cheese, mascarpone, icing sugar and chocolate spread into the Thermomix bowl. Mix 1 min speed 5 until smooth.
Layer cakes with thick frosting and caramel sauce between each layer.
Cover the outside with remaining frosting.
Press crushed chocolate biscuits around the sides.
Decorate top with strawberries, cherries, chocolate curls and melted white chocolate drizzle.
Refrigerate before serving for maximum richness.
Thermomix Giant Chocolate Fudge Brownie Lasagna
Ingredients
400 g dark chocolate
300 g butter
350 g sugar
5 eggs
2 teaspoons vanilla extract
220 g plain flour
100 g cocoa powder
1 teaspoon salt
250 g chocolate chunks
500 g cream cheese
300 ml thick cream
150 g icing sugar
250 g chocolate pudding
200 g crushed chocolate cookies
200 g caramel sauce
Mini marshmallows
Chocolate syrup
Method
Preheat oven to 175°C.
Place chocolate and butter into Thermomix bowl. Heat 5 min 50°C speed 2.
Add sugar, eggs and vanilla. Mix 40 sec speed 5.
Add flour, cocoa and salt. Mix 25 sec speed 4.
Fold in chocolate chunks.
Bake in a deep rectangular tray for 35 minutes.
Cool completely.
Whip cream cheese, cream and icing sugar in Thermomix 1 min speed 5.
Cut brownie into layers.
Spread cream mixture, chocolate pudding and caramel between brownie layers.
Repeat layers until tray is full.
Top with crushed cookies, marshmallows and chocolate syrup.
Chill overnight before serving.
Thermomix Ultimate Molten Chocolate Pudding Cake
Ingredients
350 g dark chocolate
250 g butter
300 g sugar
5 eggs
180 g flour
80 g cocoa powder
1 teaspoon baking powder
300 ml cream
200 g milk chocolate
Vanilla ice cream for serving
Method
Melt chocolate and butter in Thermomix 5 min 50°C speed 2.
Add sugar and eggs. Mix 30 sec speed 5.
Add flour, cocoa and baking powder. Mix 20 sec speed 4.
Pour half mixture into baking dish.
Spread pieces of milk chocolate in the center.
Cover with remaining batter.
Bake at 180°C for 25 minutes until edges are cooked but center stays soft.
Serve hot with melting vanilla ice cream and extra chocolate sauce.
