THERMOMIX MEGA DELUXE CLUB SANDWICH RECIPE

Ingredients

600 g bread flour

8 g instant yeast

15 g sugar

12 g salt

350 g warm water

40 g olive oil

600 g cooked chicken breast

200 g mayonnaise

150 g cream cheese

2 tablespoons mustard

250 g cheddar cheese

250 g mozzarella cheese

4 tomatoes

2 cucumbers

2 red onions

2 avocados

2 cups lettuce

1 cup sweet corn

1 red bell pepper

1 yellow bell pepper

100 g black olives

2 tablespoons lemon juice

2 teaspoons garlic powder

2 teaspoons paprika

1 teaspoon black pepper

1 teaspoon dried oregano

50 g butter

Method

Add warm water, sugar, and yeast to the Thermomix bowl and mix for 2 minutes at 37°C on speed 2. Add flour, salt, and olive oil and knead using the Dough function for 6 minutes. Transfer the dough to a bowl and leave until doubled in size. Shape into large sandwich loaves and bake at 200°C until golden brown. Cool completely.

Place cheddar and mozzarella into the Thermomix bowl and grate for 10 seconds on speed 8. Transfer to a bowl.

Add mayonnaise, cream cheese, mustard, garlic powder, paprika, oregano, black pepper, and lemon juice to the Thermomix bowl. Mix for 25 seconds on speed 4. Add chicken and mix on reverse speed 2 for 20 seconds.

Slice tomatoes, cucumbers, onions, avocados, and bell peppers. Drain the sweet corn and slice the olives.

Cut the cooled bread into three horizontal layers. Spread butter lightly over the first layer. Cover with lettuce, tomatoes, cucumbers, onions, bell peppers, sweet corn, olives, chicken mixture, and a generous amount of grated cheese.

Place the second bread layer on top and spread another layer of sauce. Add lettuce, avocado slices, tomatoes, cucumbers, onions, chicken mixture, and more cheese.

Place the final bread layer on top. Press gently. Wrap tightly and chill for 1 hour. Remove from the refrigerator and cut into large squares or triangles. Serve with fries, salad, roasted vegetables, soup, or fruit. This large sandwich is ideal for parties, family gatherings, picnics, celebrations, and meal preparation because it can be made ahead and sliced into many portions. The combination of homemade bread, creamy filling, fresh vegetables, rich cheese, and flavorful seasonings creates a hearty sandwich with many layers of texture and taste. For variation, add roasted chicken, turkey, beef, tuna, spinach, arugula, pickles, jalapeños, or different cheeses. The sandwich can be enjoyed warm or cold and remains flavorful after chilling, making it a convenient and satisfying meal for a crowd.
