Instructions
Begin by selecting firm, crisp dill pickles. Softer pickles can release too much moisture and make the roll-ups difficult to assemble. Remove the pickles from the jar and place them on several layers of paper towels. Roll them gently to absorb excess liquid. Allow them to rest while preparing the remaining ingredients.
Preheat the oven to 400°F (200°C). Line two large baking sheets with parchment paper. Do not skip the parchment paper because melted cheese can stick firmly to unprotected pans.
