Crispy Cheesy Potato Stacks Recipe
Ingredients
6 medium potatoes thinly sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
2 tablespoons melted butter
1 tablespoon fresh thyme
1 tablespoon chopped parsley
Method
Preheat the oven to 200°C.
Wash and peel the potatoes. Slice them into very thin rounds.
Place the potato slices in a large bowl.
Add olive oil, melted butter, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
Mix thoroughly until every slice is coated.
Add half of the Parmesan cheese and mix again.
Grease a muffin tray or baking dish.
Stack the potato slices into small towers and place them tightly into the muffin cups.
Bake for 20 minutes.
Remove from the oven.
Sprinkle mozzarella, cheddar, and the remaining Parmesan over each stack.
Return to the oven and bake for another 20 to 25 minutes.
Cook until the tops are deeply golden, crispy, and bubbling with melted cheese.
Allow the stacks to cool for 5 minutes.
Carefully remove them from the tray.
Sprinkle with thyme and parsley.
Serve immediately while the cheese is stretchy and the edges are extra crispy.
For even crispier results, soak the potato slices in cold water for 30 minutes before cooking, then dry them completely. This removes excess starch and helps create a crunchier texture.
