This recipe is designed to create a generous seafood boil packed with sweet crab, juicy shrimp, smoky spicy sausage, tender potatoes, corn, and broccoli, all coated in a rich garlic butter seasoning. It serves approximately 10–12 people.
Ingredients
For the Boil
4 pounds large shrimp, shell-on and deveined
4 pounds crab legs or crab clusters
3 pounds spicy smoked sausage, sliced into thick rounds
3 pounds baby potatoes
8 ears corn, cut into halves
4 large heads broccoli, cut into florets
2 large onions, quartered
2 lemons, halved
4 gallons water
1/2 cup seafood boil seasoning
4 tablespoons salt
2 tablespoons black pepper
6 bay leaves
For the Garlic Butter Sauce
3 cups unsalted butter
20 cloves garlic, finely minced
1/4 cup paprika
3 tablespoons smoked paprika
3 tablespoons cayenne pepper (adjust to taste)
3 tablespoons chili powder
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons dried oregano
2 tablespoons dried thyme
2 tablespoons brown sugar
2 tablespoons crushed red pepper flakes
2 tablespoons hot sauce
2 tablespoons lemon juice
2 teaspoons black pepper
1 teaspoon salt
For Garnish
Fresh parsley, chopped
Extra lemon wedges
Additional hot sauce if desired
Preparation
Begin by washing all vegetables thoroughly. Cut the broccoli into medium florets so they remain firm during cooking. Slice the sausage into thick rounds. Quarter the onions and cut the corn into halves. Rinse the shrimp and crab legs under cold water.
Fill a very large stockpot with about 4 gallons of water. Add the seafood boil seasoning, salt, black pepper, bay leaves, onions, and the juice from the lemons. Squeeze the lemons into the water and then drop the lemon halves into the pot as well.
Place the pot over high heat and bring everything to a rolling boil. Once the water is boiling vigorously, add the baby potatoes. Cook for approximately 15 to 20 minutes or until the potatoes are nearly tender when pierced with a fork.
Add the sliced spicy sausage to the boiling pot. Allow the sausage to cook for about 5 minutes. This step releases flavor into the broth and allows the sausage to absorb the seasoned liquid.
Add the corn pieces and continue boiling for another 5 minutes.
Next, add the broccoli florets. Cook for 3 to 4 minutes. The broccoli should become bright green and slightly tender while still holding its shape.
Add the crab legs to the pot. Since most crab legs are already cooked, they only need about 5 to 7 minutes to heat through and absorb flavor.
Finally, add the shrimp. Cook for 2 to 4 minutes, depending on size. The shrimp are done when they turn pink and opaque. Avoid overcooking because they can become tough.
While the seafood boil is cooking, prepare the garlic butter sauce.
In a large saucepan over medium heat, melt the butter completely. Add the minced garlic and cook gently for 2 to 3 minutes until fragrant. Do not allow the garlic to brown.
Stir in the paprika, smoked paprika, cayenne pepper, chili powder, onion powder, garlic powder, oregano, thyme, brown sugar, crushed red pepper flakes, black pepper, and salt. Mix thoroughly and cook for another 2 minutes so the spices bloom in the butter.
Add the hot sauce and lemon juice. Stir continuously for another minute. The sauce should be rich, glossy, and intensely aromatic.
Once all ingredients in the boil are fully cooked, carefully drain the pot, reserving about 1 cup of the seasoned cooking liquid.
Pour the seafood, sausage, potatoes, corn, and broccoli into a very large mixing container, roasting pan, or directly onto a clean table lined with parchment paper.
Add the garlic butter sauce over the entire seafood boil. Pour in a small amount of the reserved cooking liquid and toss gently until everything is evenly coated with the buttery seasoning mixture.
Taste and adjust seasoning if desired. For more heat, add additional cayenne pepper or hot sauce. For more brightness, squeeze fresh lemon juice over the top.
Allow the boil to rest for about 5 minutes before serving. This gives the ingredients time to absorb the garlic butter sauce.
Scatter chopped parsley over the seafood boil and serve with lemon wedges on the side.
Serving Suggestions
Serve with crusty bread for soaking up the seasoned butter sauce. A side of coleslaw provides a cool contrast to the spicy flavors. Extra melted butter can be offered for dipping crab and shrimp. Pickles, roasted garlic, and additional grilled sausage also pair well with the boil.
Storage
Store leftovers in airtight containers in the refrigerator for up to 2 days. Reheat gently with a little butter and a splash of water or seafood stock to maintain moisture. Avoid overheating shrimp and crab, as seafood can become rubbery when overcooked.
The result is a massive, flavorful seafood feast featuring succulent shrimp, tender crab, spicy sausage, hearty potatoes, sweet corn, and vibrant broccoli coated in a bold garlic butter sauce with layers of smoky, spicy, and savory flavor.
